I always take at least half an hour for lunch, often with a book. Today I had cous cous with a lemon and olive oil dressing with avocado, cashews, roasted aubergine and crumbled ewe's cheese. nom nom!

These all sound great. One of my biggest challenges is taking the time to actually sit down and make myself something for lunch. Instead, I use that as my time to leave the home (my office) and step out into the fresh air. Sadly, it also means I tend to eat fast food. I really want to change that and am always looking for lunch at home ideas.
