On the Mat: Knees, Chest, Chin
Off the Mat: Today’s podcast is on bountiful living with Kate Vickers.
So go, look in a mirror, bountiful living means you, you in all your splendor, your loving, your feeling, your insights and your confusion, the complexity and simplicity that makes you, is all that is bountiful. Look no further, you are the wealth of the world. Experience that, and your will experience bountiful living. – Kabir, Vision MagazineKate is a Certified Holistic Health Counselor with the America Association of Drugless Practitioners, and Certified Experienced Yoga Instructor, and Licensed Massage Therapist. Kate’s mission is to inspire people to take control of their health by creating healthy new relationships and habits with food and balanced living.
Kate Vickers has been actively involved in the healing arts for the past 10 years. She began her journey and education with her own health. Searching to find natural remedies for her hypoglycemia, migraine headaches, and intestinal problems led her to yoga, meditation, organic healing foods, massage, and other natural healing methods.
After receiving her BA in Dance and Movement therapy and dancing with a dance company in Northern California, she moved to Arizona and got her other degree in Occupational Therapy and worked at an acute rehab hospital. During her time in Arizona, she immersed herself into yoga and healthy eating in order to heal herself from her own health issues.
Upon moving to Virginia, Kate decided to leave the Occupational Therapy world and continue to immerse herself into other healing arts. Kate finished up her yoga teacher training program, went to massage school, and then graduated from the Institute for Integrative Nutrition.
She now uses all of her healing tools and knowledge when working with others to help her clients cultivate life they were meant to live…full of vitality, energy, health, wellness, and bliss!
Omwork: To encourage a sense of diving deeper into today’s podcast, I will post Omwork relating to this segment on our HTC forum. Please connect with fellow HTCs there and play with the following:
1. What does living a bountiful life mean to you?
2. What small steps can you take today to lead a more bountiful life?
Savvy Sources:
Freezer Fudge
2 C almond butter
1/4 C raw cacao powder
1/2 C + 2 T agave nectar
1 heaping T coconut butter
2 t vanilla extract
1 t course Himalayan sea salt
Mix all ingredients well in a large bowl, make sure to taste in case you need to add more agave or cacao powder. Spoon mixture into little candy molds or line a square baking pan with parchment paper and spread the fudge evenly. Cover and place in freezer to chill. If using the pan, remove from the freezer after an hour or so, flip onto a flat surface and cut into squares.
Store in a container in the freezer.

I would love to know the whole wheat breakfast food Kate was referring to in this podcast. Something with the consistency of Cream of Wheat but I couldn't make out the name if anyone knows pretty please email me at shough@cctc.com
Hu. I came here to see if there was any mention of a malfunction with this episode, because my Itunes only gave me 2:30 minutes worth of the podcast. I was so disapointed, but figured that perhaps there had been a problem on your end. I will have to see if I can redownload it when I get home...
PS I love love love what you do, and have finally caught up on all of your episodes! Thanks for the inspiration and fabulous tips for life on and off the mat!
Sometimes iTunes kicks out. Best bet is to delete what you have, then go back to the HTC page in iTunes and click on "Get Epsiode" for the one you need. Usually works on the second try!
I have been searching ever since I heard the podcast, but cannot find coconut butter anywhere! I checked Giant, Whole Foods...my mother found something in a candy supplier catalog and it was tres expensive! Does anyone know of a source, or a substitute?
The Raw Fudge Res. Was YumO. I have been experimenting with Raw food and love to try new things.
Thank you so very much for the easy and delightful dish!
